「民以食為天!」 歷史的發展伴隨著糧食資源豐富的區域,古中國流傳至今的這句話說明了「吃」是多麼重要的一件事,求得三餐溫飽遂成為那個時代的人的生活中心。但相較於遠古時代,現今的人們較少為了「吃飽」而煩惱,而自此衍生而出的是「不只吃飽,更要吃好」,開始追求大魚大肉、滿漢全席;開始改變烹調方法,煎煮炒炸、煙燻、醃製;開始利用食品加工的技術為食物加上各式各樣的顏色與味道。 導致在食品加工業蓬勃發展的現代,「吃」這件事變成了一個疑問詞,重視養生的我們開始對吃進去的東西產生疑問,「我吃進去的食物有哪些成分?」、「食品添加物是什麼?」、「食品的檢驗標準是怎麼訂定的?」、「檢驗超標會對人體產生什麼危害?」,這些各式各樣對於吃的疑問加上媒體的渲染下,對「吃」的恐懼油然而生。 「吃得飽不如吃得巧!」 對應這些問題,其實科學家們發展出了多套嚴謹的毒理機制來評斷食品安全性。而我們將在本課程中以深入淺出的概念將毒理學應用在食品安全評估,介紹這些機制運作的方法和實際應用的例子,希望使同學了解看到擺在架上的食品,其背後許多不為人知的故事,並在面對層出不窮的食安問題時,能具有相當的基本概念,與對這些問題的思辨能力。

Thinking about teaching your university subject in English but it’s not the Language you normally use? Then, English for teaching purposes is the course for you. A course on English and teaching methodology that aims to help university lecturers do their teaching in English, in line with university internationalisation policies. The course structure is the same for all learners and there are opportunities for them to link up with colleagues from universities all over the world who share the same discipline and discourse community, to ask questions and exchange ideas. This MOOC targets lecturers who wish to begin using English in their teaching. A priori, this means university lecturers from countries where English is not the L1 or a widely-used language (Romance language-speaking countries, for example), though in fact the course is open to teachers from all educational stages who want to teach through English, following the principles of EMI (English Medium Instruction). On completing the course, you should be able to do the following. a) Teach a university subject in English, having gained the necessary confidence and skills. b) Integrate all aspects of CLIL (methodological, pedagogical, strategic, attitudinal, motivational, linguistic, sociolinguistic and pragmatic) to put together their own English-medium course on their particular subject. c) Describe the characteristics of the university lecture discourse genre (planning, agents, channels, phases, dynamics, and current flexibility of the genre). d) Understand and perform the basic linguistic macro-functions within English teaching discourse. e) Understand and perform, using the appropriate linguistic exponents (vocabulary, structures, and phraseology), the main micro-functions in English teaching discourse: metalinguistic, informative, evaluative, inductive, and social. f) Consolidate their oral expression and interaction skills, and their grammar and vocabulary, at English levels C1 and C2 as defined by the Council of Europe. Advanced Capstone Spacecraft Dynamics and Control Project
This capstone course is the 3rd and final course of the specialization Advanced Spacecraft Dynamics and Control. It assumes you have completed the prior courses on "Attitude Control with Momentum Exchange Devices" and "Analytical Mechanics for Spacecraft Dynamics". This project course investigates the dynamics of a complex spacecraft system where there is a rigid hub onto which a hinged panel is attached. This simulates a spacecraft with a time varying geometry. First, the three-dimensional kinematics of this system are explored. Analytical relationships of the body and panel position and velocity states are derived, and the center of mass properties of this system are explored. Next, a simplified system is used to use Lagrange's equations of motion to predict the dynamical response. With these differential equations we are then able to apply attitude control torques and investigate the rotational response if the spacecraft hub has a spring-hinged panel attached. Two open-loop control torque solutions are investigated. The classical minimum time bang-bang control solution is applied first, illustrating how such a control can yield unwanted panel oscillations. Finally, a filtered version of the bang-bang control is applied to illustrated how the panel oscillations can be significantly reduced at the cost of a slightly longer nominal maneuver time. Discrete-Time Markov Chains and Monte Carlo Methods
A Markov chain can be used to model the evolution of a sequence of random events where probabilities for each depend solely on the previous event. Once a state in the sequence is observed, previous values are no longer relevant for the prediction of future values. Markov chains have many applications for modeling real-world phenomena in a myriad of disciplines including physics, biology, chemistry, queueing, and information theory. More recently, they are being recognized as important tools in the world of artificial intelligence (AI) where algorithms are designed to make intelligent decisions based on context and without human input. Markov chains can be particularly useful for natural language processing and generative AI algorithms where the respective goals are to make predictions and to create new data in the form or, for example, new text or images. In this course, we will explore examples of both. While generative AI models are generally far more complex than Markov chains, the study of the latter provides an important foundation for the former. Additionally, Markov chains provide the basis for a powerful class of so-called Markov chain Monte Carlo (MCMC) algorithms that can be used to sample values from complex probability distributions used in AI and beyond. Outside of certain AI-focused examples, this course is first and foremost a mathematical introduction to Markov chains. It is assumed that the learner has already had at least one course in basic probability. This course will include a review of conditional probability and will cover basic definitions for stochastic processes and Markov chains, classification and communication of states, absorbing states, ergodicity, stationary and limiting distributions, rates of convergence, first hitting times, periodicity, first-step analyses, mean pattern times, and decision processes. This course will also include basic stochastic simulation concepts and an introduction to MCMC algorithms including the Metropolis-Hastings algorithm and the Gibbs Sampler.

This course equips learners with the information they need to deploy reCAPTCHA in their websites, mobile applications, and web application firewalls (WAF). The course covers roles and permissions needed to integrate various reCAPTCHA features such as keys, assessments, and IP address allowlists, as well as the steps involved in preparing their cloud environment for reCAPTCHA integration.
